Set oven to 180 degrees.
Melt 3 teaspoons of coconut oil with 3/4 cup of rice malt syrup in the microwave for approx 40 seconds.
Meanwhile throw all the following ingredients into a mixing bowl;
2 teaspoons black chai seeds
1/3 cup of shredded coconut
1/4 cup of flaxseeds
1 cup organic oats
1 tablespoon of pumpkin seeds
1/4 cup linseed meal
1/4 cup of nuts (your choice - I like cashews)
Add the melted liquid to the dry ingredients and mix with a wooden spoon until all ingredients are combined.
Pour out into lined 25cm by 15cm baking dish and tightly pack. Bake in oven for 15 mins.
Leave to cool for 5 mins in baking dish then remove and leave in baking paper until totally cooled before cutting.
