My dear friend Amanda shared this recipe with me just last week – I went home and made it for dinner that night and my children smashed it down.
Healthy Cheesy Macaroni
Steam potato, sweet potato and zucchini until very soft– portion sizes are up to you but I just did one of each vegetable.
Whilst vegetables are cooking make up a cheese sauce (again I will leave portion sizes up to your discretion).
Cook 500g of pasta of choice until al dente.
Process all vegetables together until they resemble baby food.
Combine cheese sauce with pureed vegetables and then stir through the drained pasta.
Top with breadcrumbs and a little grated cheese and pop in oven at 180 degrees for 10 minutes.
The beauty of this recipe is if you make plenty you can have leftovers the next day.
